It isn’t the barbecue that makes mouthwatering meals out of steak, chicken, burgers, pork chops, grilled vegetables and more. Those foods rely on seasoning, sauces, and tenderizing know-how.
Benefits of Marinating:
Marinades have a variety of benefits that would make you wonder why anyone would cook without it? A proper marinade used for the right amount of time will:
- tenderize your meat
- make the meat moist and juicy
- add flavour to the meat
Any kind of meat (or veggie) can be soaked in a marinade, with the proper blend of acids, oil and flavour balanced just so, to penetrate right through the meat (or season the veggies).
Marinating involves 3 easy steps:
- simply pour the marinade over pierced meat, fish or vegetables
- refrigerate
- grill, bake or broil
Follow these marinating guidelines for excellent results:
| Red meats |
Minimum 30 minutes; for premium flavour and tenderness, 12 to 24 hours. |
| Poultry |
Minimum 30 minutes; for best taste results, 12 to 24 hours. |
| Pork |
Minimum 30 minutes; for maximum flavour and tenderness, 12 to 24 hours is best. |
| Lamb |
Minimum 30 minutes; overnight is best. |
| Whole fish |
Minimum 30 minutes; maximum 1 hour. |
| Salmon |
Best soaked for 20-30 minutes maximum. |
| Vegetables |
Minimum 20 minutes; maximum 30 minutes. |
